Fall is here and it's time to bring out the Crock-Pots and Slow Cookers.
Dear diary. October 17, 2021. I sit up and look at the clock. It's 9:21 am. My body said that's enough sleep for the day. I began to get out of the bed one leg at a time. My feet hit the rug. Brain says "yay, you slept in." Continue to walk to the bathroom. Foot hits the hardwood floor. Brain; "wow, a little chilly." One step into the bathroom. Brain "holy crap cold tile!! Where are your socks!?"
Yep, Fall is here!
So as usual the start of my day begins with, "what's for dinner?" I know I know, we all begin the day like that. Especially as mothers. But it's a never-ending cycle. We have to eat daily. Kids are always hungry. You have to trick them with veggies. Everything good for you tastes horrible according to them.
So I'm thinking, what haven't we had in a while? I want something hearty but I also don't want to be in the kitchen all day. I have a podcast to record, a book to finish correcting, another book I need to finish reading, clothes to wash... and the list goes on and on.
What's for dinner MOM?
Well, you can probably gather from the title that, I am bringing out the crockpot. YES!! It's crockpot season. So tonight's dinner is Chili. Chili is the perfect meal for a cool day that doesn't include slaving over a hot stove all day.
Ingredients:
1lb ground turkey
2 bell peppers
1 15 oz. kidney beans
1 onion
1 15 oz. sweet corn
2 15 oz. tomatoes diced
2 15 oz. tomato sauce
1 tbsp. chili powder
1 tbsp. cumin
cheese
sour cream
1 avocado
1-2 tsp olive oil

Dice the onion and peppers.
Add olive oil to a skillet and brown the ground turkey, onion and peppers.
Drain.
add the cooked turkey, peppers and onions in the bottom of the crock pot along with the diced tomatoes, kidney beans, corn, cumin and chili powder. Cook on low for 6 hours or high for 4.
Occasionally stir.
Viola. Plate and add your sour cream, cheese and avocado. Yes avocado. Don't knock it.
Pairs perfectly with an angry orchard on a fall day. ENJOY!!
